When I first got this idea to stuff canned artichoke hearts, I thought that removing the centers would be so much harder. But in reality when you halve them, the centers are so easily removed.

Just grab the centers with your fingers and it practically falls out. Just leave at least 2 layers of outer leaves to hold the filling.

But don’t toss those removed centers! Give them a quick chop, mix them with canned spinach, canned clams, cheese, egg, mayonnaise and seasonings for the perfect keto-friendly filling.

Here’s the part that’s super flexible. I’ve made these Keto Spinach Clam Artichoke Hearts several times, and you can either add the saucey ingredients to the bottom of your casserole dish OR pour them right over top (like in my video).

I’m a fan of both ways for different reasons. On top makes it more of a casserole for a side dish. Whereas on the bottom makes them more individual, better for an appetizer.

Top it all off with even MORE cheese.

Bake at 425°F for 20-25 minutes or until it’s all sorts of bubbly, cheesy, awesomeness….

Servings: 8 servings

Ingredients

  • 2 cans organic artichoke hearts drained
  • 1 can spinach drained well
  • 2 cans Minced Clams drained
  • 8 ounces shredded mozzarella cheese divided
  • 1/2 cup grated parmesan cheese divided
  • 1 large Egg(s), Organic Pasture Raised
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Sea Salt
  • 1/8 teaspoon Black Pepper
  • 1/4 cup Heavy Cream
  • 2 tablespoons Organic Grass-Fed Butter (or ghee), melted

Instructions

  • Preheat oven to 425F.
  • Halve artichoke hearts and remove centers, set aside.
  • Finely chop the artichoke centers. Combine with spinach, clams, 1/2 of the mozzarella cheese, 1/2 of the parmesan cheese, egg and seasonings. OPTIONAL: pulse in a food processor, if desired.
  • Fill each artichoke boat with spinach & clam mixture.
  • In 9×13 pan, add melted butter, cream and remaining parmesan cheese*
  • Place stuffed artichokes in the pan, Top with remaining mozzarella cheese.
  • Bake at 425 for 20-25 minutes, or until hot and bubbly. Enjoy!

Notes

*Butter, cream and parmesan can be put on TOP of the stuffed artichokes for a casserole style dish.
