Do you love beets, but hate the mess they make when your cooking them? They’ll stain your hands, your countertops and everything you’re wearing. It’s that time of year when our gardens and farmers markets are full of the most amazing fresh beets but so many people struggle to find an easy way to cook beets…
I’ve got the perfect solution for you! I’ve mastered how to cook beets without making a mess!
First of all you’ll want to cut the leaves off your beets, leaving about 1 inch of stem. If you cut them off any lower the pink of the beets will bleed out. And don’t throw away those beet greens, they are excellent cooked just like you would kale, collards, spinach, etc.
Then give them a good wash, removing any dirt on the roots and arrange them on a baking sheet (I line mine with aluminum foil to make clean up easy)…. drizzle them with a little healthy fat and season liberally with sea salt.
Cover your beets with foil and bake them at 350 degrees for 30+ minutes. You can tell if your beets are done by sticking a knife down into them (through the foil) they should have the same feeling as a cooked potato. Small beets will obviously cook faster than large beets, don’t be worried if your large beets take over an hour to get tender.
When you beets are done, remove them from the oven, uncover and allow to cool enough for you to handle them in your bare hands. Take each beet and (carefully) run them under cool water while slipping off the skin, stem & root – they will literally just slide right off! And since you’re peeling them with your hands under running water, they won’t stain your hands pink!
Now isn’t that so easy? and all your mess is contained in the sink. Nothing is stained pink 🙂 Feel free to enjoy your fresh cooked beets right way with some butter, salt & pepper or use them in your favorite recipe! They can even be frozen to eat later 🙂
And just as a reminder – don’t be shocked when you.. well.. go #2 because after you eat beets it’s totally normal for your poo to be pink! However if your pee is pink, it can be an indication of low stomach acid 🙂
